These are super easy & a great little morning treat! The recipe makes a 8-12 mini muffins, but I usually end up eating most of them (I can’t help it) so double the recipe if you intend to share with more than one person, or if you want something to nibble on later.
1 c flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp sugar
2 tbsp maple syrup
2/3 c buttermilk (or milk + 1 tbsp vinegar)
2 tbsp melted butter
1/2 c choc. chips
1.) Preheat oven to 350F.
2.) Combine dry ingredients.
3.) Combine milk, egg, syrup & butter, then add to dry ingredients.
4.) Stir in chocolate chips. Reserve a few to sprinkle on top.
5.) Bake for 8-9 mins. Let cool a moment and serve with maple syrup (if you have a sweet tooth like me) or on their own.
