Banana brownies?!

I came across an unbelievably delicious brownie recipe and in honour of the last bit of it (which I am currently eating), I give you:

banana split pudding brownies (yes, you better believe this shit!)

brownies:
4 oz semisweet chocolate, chopped (I used choc. chips: it was about 1/2 c)
2 mashed ripe bananas
1/3 c canola oil
1 c sugar
1 tsp vanilla extract
3/4 c flour
1/4 c cocoa powder
1/4 tsp baking soda
1/8 tsp salt

pudding:
2 mashed ripe bananas
2 tbsp sugar
1/4 c milk (soy, rice, whatever)
1 tbsp arrowroot powder or tapoica starch

decoration:
sliced bananas

Preheat oven to 350F. Lightly grease a cooking pan (9×13 or something comparable).

first, make the brownies:
1.) Melt the chocolate in a real or improvised double boiler (heat-proof bowl over small pot of boiling water). Stir with a heatproof spatula until completely melted, then remove from heat and let cool.
2.) In one bowl, combine 2 mashed bananas, oil & sugar. Mix for 3 minutes, add in the vanilla & chocolate and mix more.
3.) In another bowl, mix all the remaining dry ingredients. Add to the banana bowl in batches, mix till all combined.

then, make the pudding:
1.) In a small bowl, combine all ingredients and mix for about 3 mins.

now, combine them!
1.) Spread the brownie batter evenly on the bottom of the pan.
2.) Pour the pudding on top and spread evenly.
3.) Bake for 30 min. Remove from oven and let cool for 15 mins, then move to the fridge to finish cooling. Cut into squares and serve with a few slices of banana on top.

It probably seems like a lot more work than it is! This is a super simple and rewarding recipe. The brownie batter could stand alone but the pudding topping makes it a real treat.
