chewy vegan ginger cookies!

I recently got the raddest cookbook–Vegan With a Vengeance Here is an amazing recipe from it–Sparkled Ginger Cookies. I made these on Thursday and all I have to say is MMMMM.

4 tbsp turbinado or demerrara sugar (granulated works ok too)
2 c flour
1tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 1/2 tsp ground ginger
1/2 tsp cinnamon
1/2 tsp ground cloves
1/2 c canola oil
1/4 c molasses
1/4 c soy milk
1 c sugar
1 tsp vanilla extract

1.) Preheat oven to 350F, place turbinado sugar in a small bowl.
2.) Sift together flour, baking soda, salt & spices.
3.) In another bowl, mix the oil, molasses, soy milk, sugar and vanilla.
4.) Pour the dry ing. into the wet ing. and combine well.
5.) Roll into 1-inch balls, flatten into a 1 1/2 -inch disk , press the cookie top in turbinado sugar, place an inch a part sugar side up on a cookie sheet and bake for 10-12 mins.
